Get Your Shine On.....

Work has simmered back down to 40 hours a week instead of the 50-75 hour weeks, with a few 32 hour shifts (yes, you read that right, I was at work with out going home for that long!) tossed in there just to make it more interesting and so I have now have the time (and honestly the inclination/brain function!) to blog again, yeah!

 I got the new caramel ribbon crunch frap from Starbucks and let me tell you, that sucker is amazing! You can hardly taste the coffee at all for all you Strabucks lovers/coffee haters out there! ;-) 

My outfit for last Sunday featuring my new peacock skirt and my very first black shirt. Yep, you heard correctly, I've never owned a black shirt before as I was kind of prejudiced against the color as a whole.....but I've slowly been getting over it!

 My hair was in two french braids with the ends bunned in the back with one of those giant octopus clip things (I know, I know, the technical terms I use!) I pulled out some tendrils and got them damp so they would air dry curly and I apologize for the wonky bangs, the humidity is currently winning that battle.....*sigh*

 I was always torn between wearing a watch or a bracelet,  it seemed like to much to wear something on both wrists.....but then I saw a Fossil ad with a watch and bracelets on the same wrist and my world was changed!

Don't Stop Believin'

~I believe that one day I will get used to it being 80 and humid in April, but that day is not today!

Bread Bakin' Time!

Mmmm, I love bread, and pasta, and tortillas.....
You know what?.....
I'm kind of a carb fan in general!
But for the purpose of this post, let's just talk about bread, shall we? ;-)


I found THIS RECIPE on Pinterest (where else, right?) and had to try it! I was a little skeptical, having made real English muffins before and after a hot, long mornings worth of work, had tough misshapened Frisbees for lunch.....


Ahem, anywhoodle..... 


I threw this together in less then half an hour and fell in love with my first yeasty, thick crusted, chewy, but not heavy bite! My brain imediately began racing trying to figure out what I could do to make this bread better (Yes, I know, I just said it was perfect, so sue me! That's just how I roll!) or could I make wheat bread from this recipe?


Long story short, I could and did!


 Does anyone else have a loathe/hate (heavy on the loathing) relationship with cling wrap?


I make all of my family's bread now. I bake one full batch at the beginning of the week and bake two loaves, and freeze the rest for later!


Tadaa!!!



English Muffin Bread (Original Recipe)

11 cups all purpose flour

5 1/2 cups warm water

3 packages rapid rise yeast

2 Tablespoons salt

3 Tablespoons sugar

2 tablespoons melted butter

Preheat oven to 350 degrees.

Mix all ingredients together in bowl, except for butter, then separate into 4 well greased loaf pans, cover with greased plastic wrap and let rise until dough reaches tops of bread pans, about an hour. Remove plastic and bake for 25 minutes then brush tops of loaves with melted butter, put back oven for another 10 minutes.

English Muffin Bread (KatySue Version)

This is for two wheat loaves and two white loaves! I split the recipe in half and have never written it down, so excuse me if it's a little rough! 

First the white bread half..
 
5 1/2 cups flour 

2 3/4 cups warm water

1 Tablespoon salt (I use seasoned salt from a spice store, but regular works well too!)

2 Tablespoons sugar 

3 1/2 teaspoons rapid rise yeast

1 heaping Tablespoon malt powder

Melted butter

Mix all ingredients, except melted butter, together in bowl, spoon into greased loaf pans, cover with greased plastic wrap and let rise until dough reaches tops of bread pans, about an hour. Remove plastic, bake for 25 minutes, brush tops of loaves with melted butter then place back in oven for another 10 minutes. Immediately after taking out of the oven, remove from loaf pans, I found the bread gets soggy and loses it's crunchy crust if you let it cool at all in the pans! Let cool for a few minuets on wore rack, then enjoy!

Now for the wheat bread.....

The wheat loaves are smaller and denser then the white, so if it comes out smaller, or takes longer to rise, don't worry! I just wait until the white loaf is ready to put in the oven and even if the wheat isn't quite there yet I go ahead and bake it!

2 1/2 cups wheat flour

3 cups white flour

1/4 cup molasses (I dissolve mine in the warm water, makes it mix in better!)

2 1/2 cups warm water

3 1/2 teaspoons rapid rise yeast

1 Tablespoon salt

1 1/2 Tablespoon sugar

 Scant 1/2 cup wheat bran, plus extra for top of loaf

 Scant 1/4 cup oats, plus extra for top of loaf

Melted butter

Various other seeds, sunflower, poppy seeds, sesame seeds, just whatever you have on hand really!

Mix all in ingredients, except melted butter, together in a bowl, dough will be thicker then the white version.  Mix together extra bran, oats and seeds in a pie pan and set aside. Take half of dough and form into rough loaf, roll in set aside bran, oat, seed mixture and place in well greased loaf pans, cover with greased plastic wrap and let rise until dough reaches tops of bread pans, about an hour. Remove plastic and bake for 25 minutes, brush tops of loaves with melted butter and put back in oven for 10 minutes. Turn out of pans immediately and let cool on wore racks.

Freezing

If you would like to freeze a loaf or two, just line a loaf pan with greased plastic wrap before placing dough in. Wrap hanging ends of plastic wrap over dough and freeze until solid. Remove form loaf pan and place in plastic bags until ready to enjoy!

To thaw, just unwrap the dough and place back in greased loaf pan, place pan in 200 degree oven and wait until dough rises to the top of the pan. Remove from oven, preheat to 350, then bake as directed!

Variations

I have also made cheese bread out of the white loaf! To one two loaf batch of white bread add:

1 Tablespoon dried mustard, 
1 teaspoon of garlic and onion powder
2 teaspoons pepper

Then as you are plopping the dough into the pans sprinkle on the grated cheese of your choice. I used 2 cups cheddar with a hint of liquid smoke tossed in!

Sprinkle a mixture of dried minced onion, sesame seeds, poppy seeds, smoked paprika, salt and pepper on the loaf before baking. Continue as usual, we like this bread with Italian food!  

One of the reasons I love this recipe is the versatility! 
You could add different cheeses. 
Different flours, like rye or pumpernickel. 
Different seasonings, Italian blend, or maybe Herbs de Provence!
 Replace some of the water with honey and add almond extract for a sweet loaf (I do that for our hot cross buns recipe at Easter and it is TASTY!)

Insta-Life

I would like to introduce all y'all to my new (to me at least!) PT Cruiser, Clark! Why Clark and not Christopher or Chrissy (for Doctor 9) or any other Doctor Who inspired name for this TARDIS Blue car? I tried different ones, including Madame Blueberry (Psych and Veggie Tales fans will appreciate that one!) But they didn't seem to fit. 

Then as I was once again setting off the car alarm because I had the audacity to unlock the door with the key and not the fob, I was grousing and fumbling trying to turn of the alarm and my sister, Becca, said I should name the car Clark, from Love Comes Softly. Because even though I didn't love the fob now, love would come softly and I eventually would learn to embrace the fob!

Long story short, the name fit! Clark is one of my top 5 favorite fictional heroes, if my husband could even be a little bit like him this gal would be over the moon excited!!!!!! Thus, my car was named!

Liebster Award!

I am undertaking the 11 things tag once more, thanks to Kelli over here at.....

Having accepted the award, I now have to post 11 random facts about myself and answer 11 questions as assigned by the tagger!

~ 11 Facts~

1) I want to be Mrs. Clause! I mean, think about it. I would get to make cookies and toys all day, wear red and white fur trimmed dresses with no one thinking I'm weird and I would get to help take car of a bunch of little people I didn't have to give birth too.....

2) I'm getting a car of my very own today! And not just any car, an adorable Tardis blue PT Cruiser!

3) The main reason I avoid drinking the proper amount of water each day is because I hate how much it makes me have to pee! 

4) Josh Groban annoys me, don't know why, I just can't stand him!

5) Ditto for Barbara Streisand! I have never been able to figure out why these two people bug me oh so very much, but they do! =P

6) Nothing ruins my manicure faster the doing a sink full of dishes! 

7) It bugs me that people seem to to forget the Rose fell in love with Doctor 9, not 10! 

8) I had never pumped gas in my life until a week ago. It was illegal in Oregon to pump your own gas and I'm not sure I hated that law!

9) I like to mix my cereal kinds. For example, Cinnamon Toast Crunch with Cocoa Pops and Marshmallow Mateys with Apple Jacks!

10) Blue and green are the two nail polish colors I have to most of! 

11) I can hardly wait for the warm weather to finally get here!!!!!

1)Can you do a cartwheel?
*sigh* Nooooo, not really, but not for lack of trying! =P

2) If you had to be a movie character at a costume party, who would you pick to dress as?
Penelope!  

One of my top three favorite movies, I mean come one, it's Beauty and the Beast with a quirky twist and uh-MAZING costumes! How could I not be slightly obsessed with it?

3) Would you rather go up in a hot air balloon or go kite surfing?
Hot air balloon hands down!

4) What was the FIRST and the last movie you've seen in theaters? What do you plan on seeing next?
First was Little Mermaid and last was The Hobbit! And as for the next one, I have no idea! I am really looking forward to Joss Wedons version Much Ado About Nothing, but that's not coming out until June!

5) Is there any color you won't wear?
Some shades of green and yellow make me look ill, but it's not that I won't wear them, I just won't wear them near my face! Oh, and oatmeal, I will not wear oatmeal anywhere if I can help it! Drab grey/tan just isn't my cup of tea! 

6) If you were getting married right now, what song would you pick as your bridal recessional? Fun and petty? Meaningful and spiritual? Classical or pop? Live or canned?
Gosh, I have no idea! I know what song I want played as I walk down the isle, but I've never thought about what song I want played as I leave.....so I'll keep thinking about it and leave you with a video for the song I want to walk down the isle to!


7) What drink do you drink the most?
As fun an answer as this is, water! Though coffee would have to be my second most drunk beverage!

8) Do you wear sunglasses? If so, how many pairs do you own?
Yep, but I just have one pair as I have prescription lenses and that ups the price of each pair by quite a bit! But, I would have a million pairs if I didn't need those darn prescription lenses, I love sunglasses!

9) Would you rather run one mile or walk three?
Walk three.....
I was almost running three, but then the move happened and my running routine got messed up and I haven't been able to force myself to start up again! It's been to cold and besides, it's really hilly in my neighborhood, blah, blah, blah, excuses excuses!

10) Do you prefer the singing of Frank Sinatra or Fred Astaire?
Frank Sinatra, but Fred Astaire is one of my favorite actors!

11) Suppose you're a phenomenal singer and dancer - if you were to be in a musical, which musical would you want to be in and what character would you like to play?
Into the Woods and Little Red Riding-hood! It's such a fun show and I love the mixed up faerie tale humor and Red is my favorite female character, the Princes are my very favorite, but they are princes and not princesses, so I'm not exactly qualified to play them!

And I am going to be phenomenally lazy and just tag everyone who wants to do this who has less then 200 followers and to further cement my laziness, I'm even going to have you use Kelli's questions!

Welcome Spring!

Happy first day of spring everyone! I've heard tell that's it's snowy and below freezing in some other parts of these United States, but right here in my corner of  Tennessee it's a practically balmy 55 right now! 

So, I think I'll stop sighing over my weather and just enjoy the glorious day I've been blessed with.....yes, I am rolling my eyes at myself while I'm typing that! ;-)

I know, I know, the lighting is wonky, blame the time of day and my slowly breaking camera!

does anyone else find it notoriously
